Instructions
- Prepare the Vegetables: Wash, peel, and dice the potatoes. Chop the onions, slice the carrots, and chop the celery.
- Sauté Base: Heat olive oil in a large pot over medium heat. Add onions and cook until translucent. Stir in minced garlic and sauté for another minute.
- Add Vegetables: Incorporate carrots and celery, cooking for 5 minutes. Add diced potatoes and mix well.
- Simmer: Pour in vegetable broth, add bay leaves and thyme. Bring to a boil, then reduce heat and let simmer for 25-30 minutes until potatoes are tender.
- Final Touches: Remove bay leaves. Adjust seasoning with salt and pepper. Add a splash of cream if desired. Garnish with fresh parsley and grated Parmesan before serving.
