- 1 tablespoon chipotle chili powder

- 1 teaspoon cumin
- Salt and pepper to taste
For the burritos:
- 4 large flour tortillas
- 1 cup cooked white or brown rice
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 cup shredded lettuce
- ½ cup diced tomatoes
- ½ cup corn kernels (optional)
- ¼ cup chopped cilantro (optional)
- ½ cup chipotle ranch dressing
Instructions
- Marinate the Chicken – Combine olive oil, lime juice, and spices. Coat the chicken and let it marinate for at least 30 minutes.
- Grill the Chicken – Cook over medium-high heat until fully cooked, about 6–8 minutes per side. Let rest before slicing.
- Prepare the Fillings – Warm the tortillas, cook the rice, and prepare all toppings.
- Assemble the Burritos – Layer rice, beans, cheese, lettuce, tomatoes, corn, sliced chicken, and chipotle ranch dressing in each tortilla.
- Wrap & Serve – Fold the burrito tightly, grill for a slight crisp (optional), and enjoy!

- For extra heat, add diced jalapeños or a drizzle of hot sauce.
- Swap black beans for pinto beans or refried beans if preferred.
