Ingredients

- 2 tbsp olive oil
- 1 pound scallops, rinsed and dried
- Sea salt flakes, to taste
- Freshly ground black pepper, to taste
- 2 tbsp unsalted butter
- 4 garlic cloves, minced
Instructions
- Heat olive oil over high heat in a non-stick pan. Reduce to medium-high once hot.
- Season one side of the scallops with salt and pepper.
- Place scallops seasoned side down in the pan using the “12 o’clock” placement method.
- Sear for 45 seconds, then flip and season the other side.
- Turn off the heat and add butter and garlic. Swirl until melted.
- Let scallops cook for 35-40 seconds in residual heat. Remove and let rest for 1-2 minutes.
Notes
- Ensure scallops are dry before cooking to achieve the perfect golden sear.
- For extra flavor, add a squeeze of lemon or fresh parsley before serving.
