Ingredients

  • 2 tbsp olive oil
  • 1 pound scallops, rinsed and dried
  • Sea salt flakes, to taste
  • Freshly ground black pepper, to taste
  • 2 tbsp unsalted butter
  • 4 garlic cloves, minced

Instructions

  • Heat olive oil over high heat in a non-stick pan. Reduce to medium-high once hot.
  • Season one side of the scallops with salt and pepper.
  • Place scallops seasoned side down in the pan using the “12 o’clock” placement method.
  • Sear for 45 seconds, then flip and season the other side.
  • Turn off the heat and add butter and garlic. Swirl until melted.
  • Let scallops cook for 35-40 seconds in residual heat. Remove and let rest for 1-2 minutes.

Notes

  • Ensure scallops are dry before cooking to achieve the perfect golden sear.
  • For extra flavor, add a squeeze of lemon or fresh parsley before serving.
