Ingredients

  • 4 cups of vanilla Ice cream (softened to a slight degree for ease of scooping)
  • 2 cups dark or semi-sweet chocolate chips
  • 2 tablespoons of coconut oil (to assist in thinning the chocolate for dips)
  • Popsicle sticks

Instructions

  1. ready for the Ice Cream Popsicles Pour soft vanilla Ice Cream into a Popsicle mold and place an ice cream stick into the middle of each. Smooth the surface of each mold before freezing for minimum 4 hours or until hard.

  4. Freeze again When all popsicles are coated with chocolate, place them back into the freezer for at least a more 30 minutes, to allow them to make the chocolate set.

  5. Serve and enjoy The treats are desirable eaten straight out of the freezer in order to keep the chocolate shell crisp and the ice cream firm.

Notes

To create a more smoky chocolate coating Dip each popsicle in chocolate twice and allow the initial layer to dry before you dip it another time.

To avoid melting in the process of dipping Make sure you work fast and ensure that the chocolate is kept hot (but not warm).
