Description

A hearty Southern classic, this swamp soup combines smoky sausage, tender greens, creamy beans, and a flavorful broth for a comforting, one-pot meal.

Ingredients

Scale
  • 4 cups turnip or collard greens, chopped
  • 1 lb smoked sausage, sliced
  • 2 cans white beans (15 oz each), drained
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 tsp black pepper
  • Optional: 1 cup ditalini pasta

Instructions

  • Sauté sausage in a large pot until browned; remove and set aside.
  • In the same pot, cook onions, celery, and garlic until softened.
  • Add beans, broth, and sausage. Bring to a boil, then reduce heat to simmer.
  • Stir in greens and optional pasta; simmer until tender (10–15 minutes).
  • Adjust seasoning and serve hot with crusty bread or cornbread.

Notes

  • For a vegetarian version, substitute smoked sausage with plant-based options and use vegetable broth.
