- 4 cups turnip or collard greens, chopped
- 1 lb smoked sausage, sliced
- 2 cans white beans (15 oz each), drained
- 1 medium onion, diced
- 2 stalks celery, diced
- 4 cups chicken or vegetable broth
- 2 cloves garlic, minced
- 1 tsp black pepper
- Optional: 1 cup ditalini pasta
Instructions
- Sauté sausage in a large pot until browned; remove and set aside.
- In the same pot, cook onions, celery, and garlic until softened.
- Add beans, broth, and sausage. Bring to a boil, then reduce heat to simmer.
- Stir in greens and optional pasta; simmer until tender (10–15 minutes).
- Adjust seasoning and serve hot with crusty bread or cornbread.

- For a vegetarian version, substitute smoked sausage with plant-based options and use vegetable broth.
