- 2 cups all-purpose flour
- 1 cup sugar
- 2 tsp baking powder

- 2 large eggs

- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and grease a baking pan.
- Blend tender coconut meat and water until smooth.
- Mix flour, baking powder, baking soda, and salt in a bowl.
- Cream butter and sugar, then add eggs and vanilla.
- Gradually combine wet and dry ingredients, adding the coconut blend.
- Pour batter into the pan and bake for 25–30 minutes.
- Cool completely before frosting or serving.
Notes
- For extra flavor, add lime zest or cardamom to the batter.
