- 1 lb boneless lamb, cut into pieces
- 1 cup lentils, rinsed
- 1 ½ cups basmati rice, soaked
- 4 cups fresh spinach
- 1 large onion, chopped
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 3 cups chicken or vegetable stock
- 2 tbsp olive oil
- 1 tsp cumin powder
- 1 tsp coriander powder
- ½ tsp turmeric powder
- Salt and black pepper to taste
Instructions
- Marinate lamb with turmeric, salt, and pepper.
- Cook lentils with cumin and stock until tender.
- Boil rice in stock until fluffy.
- Sauté spinach with garlic in olive oil.
- Sear lamb in a pan, then combine with lentils and rice.
- Add sautéed spinach just before serving.
Notes
- For deeper flavor, marinate lamb overnight.
- Substitute kale for spinach or quinoa for rice as a variation.
