Ingredients

  • 1 lb boneless lamb, cut into pieces
  • 1 cup lentils, rinsed
  • 1 ½ cups basmati rice, soaked
  • 4 cups fresh spinach
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 3 cups chicken or vegetable stock
  • 2 tbsp olive oil
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp turmeric powder
  • Salt and black pepper to taste

Instructions

  • Marinate lamb with turmeric, salt, and pepper.
  • Cook lentils with cumin and stock until tender.
  • Boil rice in stock until fluffy.
  • Sauté spinach with garlic in olive oil.
  • Sear lamb in a pan, then combine with lentils and rice.
  • Add sautéed spinach just before serving.

Notes

  • For deeper flavor, marinate lamb overnight.
  • Substitute kale for spinach or quinoa for rice as a variation.
