- 2 large red onions, thinly sliced
- 1 small bunch fresh cilantro, chopped
- 2–3 tbsp lime juice
- 1 tbsp olive oil
- Salt to taste
- Optional: diced tomatoes, sliced chilies
Instructions
- Slice red onions thinly and soak in ice water for 10 minutes.
- In a bowl, whisk lime juice, olive oil, and salt to create the dressing.
- Toss the drained onions with the dressing and add cilantro.
- Let marinate for 10-15 minutes before serving.
Notes
For a spicier version, add thinly sliced chilies or a pinch of red pepper flakes. Leftovers can be stored in the fridge for up to 24 hours.
