Ingredients

  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup sourdough starter (discard or active)
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Melt butter and mix with cocoa powder until smooth.
  3. Whisk sugars and eggs together, then combine with melted butter mixture.
  4. Fold in sourdough starter and vanilla extract.
  5. Gradually add flour, salt, and chocolate chips, stirring until just combined.
  6. Pour batter into the prepared pan and bake for 25-30 minutes.

  • For a stronger tangy flavor, use mature sourdough discard.
  • Adjust the sweetness by increasing or reducing sugar slightly.
