- 3 tbsp olive oil
- 2 tbsp fresh lime juice

Instructions
- Cook quinoa according to package instructions and let it cool.
- In a large mixing bowl, combine quinoa, chickpeas, avocado, tomatoes, cucumber, red onion, and cilantro.
- Whisk olive oil, lime juice, garlic, salt, and pepper in a small bowl to make the dressing.
- Pour the dressing over the salad and toss gently to coat evenly.
