Sassy Rice Recipe: Bold & Easy to Make

Description

Ingredients

  • 2 cups jasmine rice
  • 3 cups chicken or vegetable stock
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 1 tomato, diced
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ¼ tsp chili flakes
  • 2 tbsp olive oil or butter
  • Optional: fresh parsley, lime wedges for garnish

Instructions

  • Rinse the rice under cold water and set aside.
  • Bring the stock to a boil in a pot, add rice, reduce heat, and simmer until cooked.
  • In a large skillet, heat olive oil. Add onions and bell peppers, sauté until softened.
  • Stir in tomatoes, and spices, and cook until fragrant.
  • Fold in the cooked rice and mix until evenly coated. Adjust seasoning as needed.
  • Garnish with parsley or lime wedges and serve warm.

Notes

  • Use smoked paprika for a richer flavor.
  • Substitute jasmine rice with quinoa or cauliflower rice for a twist.
  • Can be made vegan by using vegetable stock.
