- 2 cups jasmine rice
- 3 cups chicken or vegetable stock
- 1 bell pepper, chopped
- 1 onion, diced
- 1 tomato, diced
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp garlic powder
- ¼ tsp chili flakes
- 2 tbsp olive oil or butter
- Optional: fresh parsley, lime wedges for garnish
Instructions
- Rinse the rice under cold water and set aside.
- Bring the stock to a boil in a pot, add rice, reduce heat, and simmer until cooked.
- In a large skillet, heat olive oil. Add onions and bell peppers, sauté until softened.
- Stir in tomatoes, and spices, and cook until fragrant.
- Fold in the cooked rice and mix until evenly coated. Adjust seasoning as needed.
- Garnish with parsley or lime wedges and serve warm.
Notes
- Use smoked paprika for a richer flavor.
- Substitute jasmine rice with quinoa or cauliflower rice for a twist.
- Can be made vegan by using vegetable stock.
