Description

A quick and satisfying one-pan meal with smoked sausage, bell peppers, garlic, and rice, perfect for busy nights.


Ingredients

    • 1 1/4 cups white rice (uncooked)

    • 2 tsp olive oil

    • 12 oz smoked sausage (sliced)

    • 1/2 red bell pepper (sliced)

    • 1/2 yellow bell pepper (sliced)

    • 1 small white onion (quartered and sliced)

    • 4 cloves garlic (minced)

    • 1/2 tsp kosher sea salt

    • 1/2 tsp ground black pepper

    • 5 tbsp tomato paste

    • 1 1/4 cup low-sodium chicken broth (divided)

    • 1 tsp paprika

    • 1/8 tsp cayenne pepper

    • 1 1/2 tbsp fresh parsley (chopped, for garnish)


Instructions

  • Cook rice according to package instructions and set aside.
  • In a skillet, heat olive oil, then brown the sausage for about 5 minutes. Remove and set aside.
  • In the same skillet, sauté the peppers and onions until softened, then add garlic, salt, and pepper. Cook for another minute.
  • Stir in tomato paste and chicken broth. Let it simmer for a minute before adding paprika and cayenne pepper.
  • Combine the rice, sausage, and veggies. Stir well to mix everything together.
  • Garnish with fresh parsley and serve hot.

Notes

  • Add extra heat by increasing cayenne or adding red pepper flakes.
  • You can swap the smoked sausage for andouille, chorizo, or turkey sausage.
  • For a cheesy twist, mix in shredded cheddar or Parmesan before serving.
