- 1 1/4 cups white rice (uncooked)

- 12 oz smoked sausage (sliced)

- 1/2 red bell pepper (sliced)

- 1/2 yellow bell pepper (sliced)

- 1 small white onion (quartered and sliced)

- 4 cloves garlic (minced)

- 1/2 tsp kosher sea salt

- 1/2 tsp ground black pepper

- 5 tbsp tomato paste

- 1 1/4 cup low-sodium chicken broth (divided)

- 1 tsp paprika

- 1/8 tsp cayenne pepper

- 1 1/2 tbsp fresh parsley (chopped, for garnish)
Instructions
- Cook rice according to package instructions and set aside.
- In a skillet, heat olive oil, then brown the sausage for about 5 minutes. Remove and set aside.
- In the same skillet, sauté the peppers and onions until softened, then add garlic, salt, and pepper. Cook for another minute.
- Stir in tomato paste and chicken broth. Let it simmer for a minute before adding paprika and cayenne pepper.
- Combine the rice, sausage, and veggies. Stir well to mix everything together.
- Garnish with fresh parsley and serve hot.
Notes
- Add extra heat by increasing cayenne or adding red pepper flakes.
- You can swap the smoked sausage for andouille, chorizo, or turkey sausage.
- For a cheesy twist, mix in shredded cheddar or Parmesan before serving.
- Feel free to toss in additional veggies like mushrooms, zucchini, or spinach.
