- 8–12 shrimp, peeled and deveined
- 115g capellini pasta
- 2 tbsp extra virgin olive oil
- 3 garlic cloves, minced
- 1 large shallot, finely diced
- 2 tsp chili flakes
- 2 lemons, zested and juiced
- 100ml white wine
- 2 tbsp capers
- 60g cherry tomatoes, halved
- 100ml seafood stock
- 55g butter, cubed
- Fresh basil and Parmesan for garnish
- Salt and cracked black pepper to taste
Instructions
- Boil salted water and cook capellini until al dente.
- Sauté garlic and shallots in olive oil, then deglaze with white wine.
- Add seafood stock, capers, tomatoes, lemon juice, and chili flakes.
- Poach shrimp in the sauce for 1-2 minutes per side, then add butter.
- Toss the pasta with the sauce and garnish with basil and Parmesan.
Notes
- For added creaminess, stir in a tablespoon of heavy cream.
- Adjust chili flakes for spice preference.
- Reserve pasta water to loosen the sauce if needed.
