Ingredients

  • 812 shrimp, peeled and deveined
  • 115g capellini pasta
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 large shallot, finely diced
  • 2 tsp chili flakes
  • 2 lemons, zested and juiced
  • 100ml white wine
  • 2 tbsp capers
  • 60g cherry tomatoes, halved
  • 100ml seafood stock
  • 55g butter, cubed
  • Fresh basil and Parmesan for garnish
  • Salt and cracked black pepper to taste

Instructions

  • Boil salted water and cook capellini until al dente.
  • Sauté garlic and shallots in olive oil, then deglaze with white wine.
  • Add seafood stock, capers, tomatoes, lemon juice, and chili flakes.
  • Poach shrimp in the sauce for 1-2 minutes per side, then add butter.
  • Toss the pasta with the sauce and garnish with basil and Parmesan.

Notes

  • For added creaminess, stir in a tablespoon of heavy cream.
  • Adjust chili flakes for spice preference.
  • Reserve pasta water to loosen the sauce if needed.
