- 1 tablespoon taco seasoning
- 6 cups romaine lettuce, chopped
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup shredded cheese (pepper jack or cotija)
- Tortilla strips for garnish
For the dressing:
- 1/4 cup lime juice
- 1/3 cup sour cream
- 2 tablespoons olive oil
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon minced garlic
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Marinate chicken with taco seasoning and lime juice for 30 minutes, then grill until fully cooked. Let rest and slice into strips.
- Chop romaine lettuce and prepare toppings: black beans, corn, tomatoes, avocado, and cheese.
- Blend dressing ingredients until smooth.
- Assemble salad with lettuce as the base, layered toppings, and sliced chicken. Drizzle with dressing and garnish with tortilla strips.

- For a vegetarian version, substitute chicken with roasted sweet potatoes or tofu.
