Ingredients

  • 2 chicken breasts
  • 1 tablespoon taco seasoning
  • 6 cups romaine lettuce, chopped
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup shredded cheese (pepper jack or cotija)
  • Tortilla strips for garnish

For the dressing:

  • 1/4 cup lime juice
  • 1/3 cup sour cream
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  • Marinate chicken with taco seasoning and lime juice for 30 minutes, then grill until fully cooked. Let rest and slice into strips.
  • Chop romaine lettuce and prepare toppings: black beans, corn, tomatoes, avocado, and cheese.
  • Blend dressing ingredients until smooth.
  • Assemble salad with lettuce as the base, layered toppings, and sliced chicken. Drizzle with dressing and garnish with tortilla strips.

  • For a vegetarian version, substitute chicken with roasted sweet potatoes or tofu.
