Description

Sticky Beef Noodles are a flavorful and quick weeknight meal, with savory beef, aromatic garlic, ginger, and a rich, caramelized sauce that coats each noodle perfectly. This dish is customizable and can easily be made spicy or with different proteins like chicken or tofu.

For the Noodles & Beef:

    • 250g (9 oz) thin egg noodles

    • 2 tbsp olive oil

    • 1 tsp freshly minced garlic

    • 1 tsp freshly minced ginger

    • 500g (1 lb 2 oz) ground beef

For the Sauce:

    • ⅓ cup (80 ml) sweet chili sauce

    • 1 tsp brown sugar

    • 3 tbsp tamari or all-purpose soy sauce

    • 1 tbsp dark soy sauce

    • 1 tbsp rice wine vinegar

Extras:

    • 2 cups frozen vegetables (broccoli, bell peppers, or carrots work well)

    • ½ cup (125 ml) water

    • 1 tbsp cornflour (cornstarch)

    • 2 spring onions, finely sliced

    • Chili oil, to serve (optional)


Instructions

  • Cook the noodles according to package instructions, but reduce the cooking time by 1 minute to keep them slightly firm. Drain, rinse with cold water, and set aside.
  • Heat olive oil in a large pan over medium-high heat. Add garlic and ginger, sauté for 30 seconds until fragrant.
  • Add ground beef and cook until browned (2-3 minutes).
  • Stir in sweet chili sauce, brown sugar, tamari, dark soy sauce, and rice wine vinegar. Let the sauce thicken for 2-3 minutes.
  • Add frozen vegetables, cover, and cook for 2-3 minutes until tender.
  • In a small bowl, mix water and cornflour until smooth, then add to the pan. Stir until the sauce becomes glossy (1-2 minutes).
  • Add cooked noodles and sliced spring onions. Toss everything together, cooking for another minute until heated through.
  • Serve with extra spring onions and a drizzle of chili oil, if desired.

  • For a spicier dish, add more chili oil or sriracha.
