- 2–3 large fresh tomatoes, diced
- 4–6 eggs
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in an oven-safe skillet over medium heat. Sauté garlic for 1 minute.
- Add tomatoes, season with oregano, salt, and pepper, and cook for 5-7 minutes.
- Create wells in the tomato mixture and crack an egg into each well.
- Sprinkle crumbled feta on top and bake for 10-12 minutes until eggs are set.
- Remove from oven and serve warm with crusty bread.
