These vegan chocolate matcha energy bars are a perfect mix of earthy matcha, rich cacao, and wholesome nuts. Ideal for a quick, healthy snack that’s packed with flavor and nutrients.


Ingredients

Scale
  • 1 ¼ cup rolled oats
  • ½ cup almonds
  • ½ cup cashews
  • ⅓ cup cacao powder
  • 2 tbsp matcha powder
  • 2 tbsp chia seeds
  • ⅛ tsp salt
  • 1 medium banana
  • 1 small avocado
  • ⅓ cup maple syrup
  • 2 tbsp coconut oil

Instructions

  • Preheat oven to 350°F and grease an 8×8-inch pan.
  • Combine oats, almonds, and cashews in a food processor; grind to a fine texture.
  • Mix dry ingredients in one bowl and mash banana and avocado in another.
  • Combine wet and dry ingredients until evenly mixed.
  • Spread mixture into the pan and bake for 20 minutes. Cool, slice, and enjoy!

Notes

  • Bars can be stored in the fridge for up to 5 days or frozen for 3 months.
  • Adjust sweetness by adding more or less maple syrup.
