These vegan chocolate matcha energy bars are a perfect mix of earthy matcha, rich cacao, and wholesome nuts. Ideal for a quick, healthy snack that’s packed with flavor and nutrients.
Ingredients

- 1 ¼ cup rolled oats
- ½ cup almonds
- ½ cup cashews
- ⅓ cup cacao powder
- 2 tbsp matcha powder
- 2 tbsp chia seeds
- ⅛ tsp salt
- 1 medium banana
- 1 small avocado
- ⅓ cup maple syrup
- 2 tbsp coconut oil
Instructions
- Preheat oven to 350°F and grease an 8×8-inch pan.
- Combine oats, almonds, and cashews in a food processor; grind to a fine texture.
- Mix dry ingredients in one bowl and mash banana and avocado in another.
- Combine wet and dry ingredients until evenly mixed.
- Spread mixture into the pan and bake for 20 minutes. Cool, slice, and enjoy!
Notes
- Bars can be stored in the fridge for up to 5 days or frozen for 3 months.
- Adjust sweetness by adding more or less maple syrup.
