Description
A flavorful, home-cooked Venison Breakfast Sausage Recipe ideal for breakfast. It combines healthy venison with a variety of spices for the most nutritious, delicious beginning to the day.
Ingredients
- 1 lb. lean venison that has been very finely ground
- Optional: 1/4 lb. pork fat for an added amount of moisture and flavor
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 1/2 tsp. smoked paprika
- 1/4 tsp. ground sage
- 1/4 tsp. Thyme
- Optional: 1/4 tsp. cayenne pepper for extra heat
- Optional fresh Herbs, such as parsley or basil that have been cut finely
- optional: Minced jalapenos or some hot sauce for spice
Instructions

make up the meat: If adding pork fat, mix it in with the venison and mix it in the bowl of a mixer. To make it easier to handle, place your meat by freezing it for about 30 minutes prior to.

Add spices: Sprinkle in the salt, black pepper smoking paprika and sage the thyme and any other spices or other herbs. Combine thoroughly until spice mixture is equally all over the dish.

Form patties Make the batter into tiny, even-sized patties.

Cook a Test Patties: In a hot pan, over medium-high temperature, cook a tiny portion of sausage in order to test for spice. Add more spices or salt if necessary.

Sausages to cook: Heat a little oil in the pan, after which cook your patties for three to five minutes on each side or until golden and cooked to perfection.

Serve and enjoy: Pair with eggs toast, eggs, or any of the breakfast dishes you love.
Notes
Chill Meat Chilling venison, as well as any other fat before mixing, helps make it easier to shape and handle.
Test Cook: Make sure to cook a tiny portion before you cook the rest to check that the spices are to your preference.
Storage Keep leftovers cool in an airtight container for three days or more or store them in a freezer for more shelf-life.
