Instructions
Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
Blend the drained cottage cheese until smooth. Whip egg whites and cream of tartar until stiff peaks form.
Mix egg yolks, blended cottage cheese, vanilla extract, lemon zest, sweetener, and cornstarch.
Fold the yolk mixture into the whipped egg whites. Gently fold in the blueberries.
Scoop the batter onto the prepared baking sheet, spacing them 2 inches apart. Bake for 25-30 minutes, or until golden brown.
Notes
Best served fresh, but can be stored in an airtight container at room temperature for up to a day.
