  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 cup tomato sauce
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • ½ cup grated Parmigiano-Reggiano cheese
  • ¼ cup fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 375°F (190°C). Prepare a baking dish with a layer of tomato sauce.
  • Hollow out the bell peppers, removing seeds and membranes.
  • Cook ground beef with garlic and onion until browned. Mix with rice, cheese, parsley, and ½ cup tomato sauce.
  • Stuff the peppers with the mixture and place them in the baking dish.
  • Cover with foil and bake for 1 hour. Remove foil and bake for 15 minutes more until tops are lightly browned.
