- 4 large bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1 cup tomato sauce
- 2 garlic cloves, minced
- 1 small onion, finely chopped
- ½ cup grated Parmigiano-Reggiano cheese
- ¼ cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). Prepare a baking dish with a layer of tomato sauce.
- Hollow out the bell peppers, removing seeds and membranes.
- Cook ground beef with garlic and onion until browned. Mix with rice, cheese, parsley, and ½ cup tomato sauce.
- Stuff the peppers with the mixture and place them in the baking dish.
- Cover with foil and bake for 1 hour. Remove foil and bake for 15 minutes more until tops are lightly browned.

- Use quinoa or cauliflower rice for a low-carb option.
- For a spicier kick, add diced jalapeños or red pepper flakes to the filling.
