Instructions
Preheat the oven to 375°F (190°C). Cut the peaches in half, remove pits, and arrange cut side up in a baking dish.
Mix granulated sugar, cinnamon, and brown sugar in a bowl. Drizzle melted butter and vanilla extract over peaches.
Sprinkle the cinnamon-sugar mixture evenly over peaches. Add lemon juice and a pinch of salt.
Cover with foil and bake for 25-30 minutes, until tender. Optional: Remove foil last 5 minutes for a golden top.
Notes
Let peaches cool slightly before serving. Serve warm with vanilla ice cream or whipped cream if desired.
