Instructions
Prepare the crust by crushing digestive biscuits and mixing with melted butter, then press into a springform pan and chill.
Beat cream cheese, caster sugar, sour cream, vanilla extract, and salt until smooth.
Add eggs one at a time, mixing gently after each addition.
Pour filling over crust and bake at 160°C (320°F) for about 60 minutes until set.
Chill the cheesecake, then sprinkle with sugar and caramelize with a torch before serving.
Notes
For best results, use full-fat cream cheese and sour cream.
