Ingredients
  

Crust

  • 170 g digestive biscuits
  • 100 g butter melted

Filling

  • 900 g cream cheese softened to room temperature
  • 200 g caster sugar
  • 160 g sour cream
  • 1.5 teaspoons vanilla extract
  • Pinch pinch salt
  • 4 large eggs room temperature (lightly beaten)
  • 50 g granulated sugar

Instructions
 

  • Prepare the crust by crushing digestive biscuits and mixing with melted butter, then press into a springform pan and chill.
  • Beat cream cheese, caster sugar, sour cream, vanilla extract, and salt until smooth.
  • Add eggs one at a time, mixing gently after each addition.
  • Pour filling over crust and bake at 160°C (320°F) for about 60 minutes until set.
  • Chill the cheesecake, then sprinkle with sugar and caramelize with a torch before serving.

Notes

For best results, use full-fat cream cheese and sour cream.
