Instructions
Roll out one pie crust, place in pie dish, trim excess, and preheat oven to 375-400°F (190-200°C).
Drain peaches, mix with sugars, vanilla, cinnamon, nutmeg, and lemon juice. Let sit 15 minutes.
Pour filling into crust, top with melted butter, cover with second crust, seal edges, and cut slits.
Bake at 375°F (190°C) for 45-50 minutes, until golden and bubbling. Cover edges if browning too quickly.
Cool on wire rack for 2 hours before serving.
Notes
Let pie cool completely before serving for clean slices.
