Easy Corned Beef and Cabbage

Ingredients
  

  • Potatoes, peeled and quartered
  • Carrots, cut into chunks
  • Onion, wedged
  • Corned beef brisket with spice packet
  • Cabbage, wedged
  • Garlic, minced
  • Cider vinegar
  • Bay leaf

Instructions
 

  • Layer potatoes, carrots, and onion in slow cooker.
  • Whisk water, sugar, vinegar, garlic, pepper, and spice packet; pour over veggies.
  • Top with beef and cabbage. Cook on Low 8–9 hours.

Notes

Add cabbage in the last 2–3 hours for perfect texture. Freezes well (without cabbage)!
