Ingredients
  

  • 6 cups fresh peaches peeled and sliced
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 package refrigerated pie crusts or homemade
  • 1 tablespoon butter cut into small pieces
  • 1 egg egg for egg wash

Instructions
 

  • Wash, peel, and slice peaches into 1/4-inch thick wedges.
  • Mix peaches with sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt.
  • Prepare pie crust and fill with peach mixture, distributing evenly.
  • Brush top crust with egg wash and sprinkle with sugar; dot with butter.
  • Bake at 425°F (220°C) for 45-50 minutes, then cool for 2 hours.

Notes

Let pie cool before serving. Enjoy with vanilla ice cream if desired.
