Instructions
Wash, peel, and slice peaches into 1/4-inch thick wedges.
Mix peaches with sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt.
Prepare pie crust and fill with peach mixture, distributing evenly.
Brush top crust with egg wash and sprinkle with sugar; dot with butter.
Bake at 425°F (220°C) for 45-50 minutes, then cool for 2 hours.
