Instructions
Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
Drain and blend cottage cheese until smooth. In a clean bowl, beat egg whites and cream of tartar until stiff peaks form.
Whisk together egg yolks, blended cottage cheese, vanilla extract, lemon zest, sweetener, and cornstarch. Fold into egg whites until combined.
Fold in blueberries gently. Scoop ¼ cup portions onto the prepared baking sheet, spacing them 2 inches apart.
Bake for 25-30 minutes, or until golden brown and firm. Let cool for a few minutes before transferring to a rack.
Notes
Let the cloud bread cool for a few minutes before serving, as it will firm up during cooling.
