Ingredients
  

  • 1 pound fresh ripe peaches diced
  • 1 large roma tomato diced
  • ¼ cup red onion diced
  • ½ jalapeno minced, seeds and membrane removed
  • 2 tablespoons cilantro minced
  • 1 lime juice of
  • salt and pepper to taste

Instructions
 

  • Combine all ingredients in a large bowl and mix well. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve with chips, tacos, chicken, pork, or fish.

Notes

For best flavor, let the salsa rest in the refrigerator for at least 30 minutes before serving. You can adjust the level of heat by using more or less jalapeno.
