Ingredients
  

Corn

  • 2 cans whole kernel corn, drained

Red Bell Pepper

  • 1 pepper red bell pepper, finely diced

Cheese

  • 2 cups shredded Mexican blend cheese

Mayo

  • 1 cup mayo can substitute light mayo

Pepper

  • 0.25 teaspoon black pepper

Fritos

  • 1 bag Chili Cheese Fritos, lightly crushed

Cilantro

  • fresh cilantro, for garnish

Instructions
 

  • In a large mixing bowl, stir together corn, diced bell pepper, shredded cheese, mayo, and black pepper.
  • Right before serving, stir in crushed Chili Cheese Fritos.
  • Garnish with fresh cilantro if desired.

Notes

For best flavor, refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
