Ingredients
  

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 cups carrots, sliced
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish) (optional)
  • 1 cup cherry tomatoes, halved (optional)
  • 1 zucchini sliced (optional)
  • 1 cup asparagus, cut into 2-inch pieces (optional)
  • 1 teaspoon smoked paprika (optional)
  • Parmesan cheese, grated (optional)

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Wash and chop the vegetables into bite-sized pieces.
  • In a small bowl, mix olive oil, minced garlic, oregano, thyme, salt, and pepper.
  • Toss the vegetables with the marinade in a large mixing bowl.
  • Spread the coated vegetables in a single layer on a baking sheet.
  • Roast in the oven for 25-30 minutes, stirring halfway through.

Notes

Feel free to customize with your favorite vegetables or add a sprinkle of Parmesan cheese for extra flavor.
