Instructions
Slice beef into thin strips, season lightly.
Heat oil, sear beef in batches 30 sec per side, then remove.
Add butter, cook onions 1 min, then mushrooms until golden.
Stir in flour, cook 1 min, then gradually add broth, simmer to thicken.
Stir in mustard, off heat, gently mix in sour cream, then return beef and juices, simmer 1 min. Serve hot.
