Ingredients
  

Meat

  • 600 g ribeye or scotch fillet
  • 2 tbsp vegetable oil
  • 1 large onion, sliced
  • 300 g mushrooms, sliced
  • 40 g butter
  • 2 tbsp plain flour
  • 500 ml beef broth
  • 1 tbsp Dijon mustard
  • 150 ml sour cream
  • to taste Salt + pepper

Pasta or egg noodles

  • as needed Pasta or egg noodles

Chives (optional)

Instructions
 

  • Slice beef into thin strips, season lightly.
  • Heat oil, sear beef in batches 30 sec per side, then remove.
  • Add butter, cook onions 1 min, then mushrooms until golden.
  • Stir in flour, cook 1 min, then gradually add broth, simmer to thicken.
  • Stir in mustard, off heat, gently mix in sour cream, then return beef and juices, simmer 1 min. Serve hot.

Notes

Use high-quality beef for best flavor and serve immediately.
