Instructions
Cook the orzo according to package instructions until al dente. Cook in salted water without adding oil.
Dice all vegetables and slice the olives while the pasta cooks.
Combine all ingredients in a large bowl.
Combine dressing ingredients in a jar, shake well, then dress the salad. Crumble feta over the top and toss.
Notes
For the best flavor, prepare the salad a few hours in advance to allow the flavors to meld together.
