Greek Orzo Salad

Ingredients
  

  • 0.25 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 0.5 lemon lemon (juiced)
  • 1 teaspoon oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1.5 cups orzo (uncooked, regular or whole wheat)
  • 2 cups cherry tomatoes halved
  • 1 cucumber cucumber sliced into half-moons
  • 0.5 red onion red onion thinly sliced
  • 0.5 cup olives
  • 0.75 cup feta cheese crumbled

Instructions
 

  • Cook the orzo according to package instructions until al dente. Cook in salted water without adding oil.
  • Dice all vegetables and slice the olives while the pasta cooks.
  • Combine all ingredients in a large bowl.
  • Combine dressing ingredients in a jar, shake well, then dress the salad. Crumble feta over the top and toss.

Notes

For the best flavor, prepare the salad a few hours in advance to allow the flavors to meld together.
