Protein

  • 4 pieces boneless (skinless chicken breasts or thighs)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 California avocados sliced
  • 1 cup cherry tomatoes (halved)
  • 1 cup shredded mozzarella or Monterey Jack cheese

Garnishes

  • chopped cilantro, balsamic glaze, diced red onion

Instructions
 

  • Marinate chicken with olive oil, lime juice, garlic, paprika, cumin, salt, and pepper for 10 minutes.
  • Preheat grill to medium-high heat and cook chicken for 6-8 minutes per side until fully cooked.
  • While chicken grills, prepare avocado slices and halved cherry tomatoes.
  • Top cooked chicken with sliced avocados, cherry tomatoes, and shredded cheese. Garnish with cilantro, balsamic glaze, and red onion.
  • Serve immediately and enjoy!

Notes

For extra flavor, marinate the chicken longer or add your favorite spices.
