  • 2 tablespoons olive oil
  • 1 lb lean ground beef
  • 1 medium yellow onion diced
  • 1 red red bell pepper diced
  • 1.5 lbs Yukon gold potatoes peeled and cubed
  • 1 cup beef stock or water
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2–3 green onions green onions chopped

Spices

  • 1 tablespoon cumin divided
  • 2 teaspoons paprika divided
  • 2 teaspoons dried thyme divided
  • 1 teaspoon garlic powder divided
  • 1 teaspoon salt divided
  • ½ teaspoon black pepper divided

Instructions
 

  • Cook the ground beef: Brown the beef in olive oil with half the spices, then set aside.
  • Cook the potatoes: Add potatoes to the skillet, season with remaining spices, pour in beef stock, cover, and simmer until tender.
  • Add onions and bell peppers: Saute until softened.
  • Combine ingredients: Return beef to skillet, stir in Worcestershire sauce and mustard, then serve garnished with green onions.

Notes

Adjust seasoning to taste and serve hot.
