Instructions
Preheat oven to 400°F (200°C) and grease a baking dish.
Sauté onion and garlic in olive oil until translucent, then add ground turkey and cook until browned. Drain excess fat.
Add sweet potatoes, zucchini, paprika, Italian seasoning, salt, and pepper; cook until veggies soften.
Transfer mixture to baking dish, top with cheese, and bake for 25-30 minutes until cheese melts and sweet potatoes are tender.
Garnish with parsley if desired, then serve.
Notes
For a creamier topping, add a dollop of Greek yogurt before serving.
