Homemade Samoas Cookies

Ingredients
  

  • 1 cup unsalted butter at room temperature
  • 0.5 cup sugar
  • 2 cups all-purpose flour
  • 0.25 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 Tablespoons milk
  • 0.5 teaspoon vanilla extract
  • 3 cups shredded sweetened coconut
  • 15 ounces soft caramels store-bought or homemade
  • 3 Tablespoons whole milk
  • 0.25 teaspoon salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Mix butter, sugar, flour, baking powder, and salt to form dough. Roll out to 1/4 inch thickness.
  • Cut into circles, bake for 12-15 minutes, then cool.
  • Melt caramels with milk and salt. Spread on cooled cookies, then dip tops in melted chocolate.
  • Let chocolate set, then serve.

Notes

For best results, use high-quality dark chocolate and fresh coconut.
