  • 1 pound cremini or button mushrooms cleaned and trimmed

  • 2 tablespoons honey for natural sweetness and caramelization

  • 1 tablespoon olive oil for roasting and balancing flavors
  • 1 teaspoon balsamic vinegar for a subtle tang and enhanced sweetness

Instructions
 

  • Preheat the oven to 400°F (200°C). Clean the mushrooms thoroughly by wiping them with a damp paper towel. Trim the stems slightly, but leave them intact for texture.
  • In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, and balsamic vinegar. This mixture will coat the mushrooms, ensuring they soak up all the delicious flavors. Taste the sauce and adjust the seasoning with salt and pepper if necessary.
  • Place the cleaned mushrooms in a large mixing bowl. Pour the honey garlic sauce over the mushrooms, tossing them gently until each one is evenly coated. Make sure to scrape the bowl for any extra sauce — it’s too good to leave behind.
  • Line a baking sheet with parchment paper or foil for easy cleanup. Spread the mushrooms out in a single layer, ensuring they are not overcrowded. Overcrowding can lead to steaming rather than roasting, which may result in soggy mushrooms.
  • Place the baking sheet in the preheated oven and roast the mushrooms for about 20 minutes. Halfway through the cooking time, give the mushrooms a stir to ensure even roasting and caramelization. You’ll notice the sauce thickening and creating a sticky glaze.
  • Once the mushrooms are golden brown and tender, remove them from the oven. Transfer them to a serving dish, and drizzle any remaining sauce from the baking sheet over the top. Garnish with fresh parsley for a touch of brightness and color.
