  • ¾ cup all-purpose flour gluten-free flour can be used as an alternative
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Red pepper flakes for added heat optional

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Rinse and chop fresh spinach. Sauté in olive oil until wilted, about 3-5 minutes.
  • Mix wilted spinach with feta, ricotta, and mozzarella cheese in a bowl.
  • In a separate bowl, whisk together flour, baking powder, garlic powder, salt, and pepper.
  • Fold dry ingredients into the cheese and spinach mixture until just combined.
  • Scoop tablespoon-sized portions onto the prepared baking sheet. Bake for 15-20 minutes until golden and crisp.

Notes

For an extra crispy texture, ensure the mixture is not overmixed. Consider using different types of cheese or alternative flours for variation.
