Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Rinse and chop fresh spinach. Sauté in olive oil until wilted, about 3-5 minutes.
Mix wilted spinach with feta, ricotta, and mozzarella cheese in a bowl.
In a separate bowl, whisk together flour, baking powder, garlic powder, salt, and pepper.
Fold dry ingredients into the cheese and spinach mixture until just combined.
Scoop tablespoon-sized portions onto the prepared baking sheet. Bake for 15-20 minutes until golden and crisp.
Notes
