Ingredients
  

Meat

  • 14 ounces smoked sausage, such as kielbasa, sliced into rounds

Vegetables

  • ½ cup onion, diced about 1/2 medium onion
  • 1 red bell pepper red bell pepper, diced

Pantry Items

  • 2 tablespoons olive oil
  • ½ teaspoon paprika (smoked paprika for extra flavor)
  • 1 teaspoon oregano
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 1 cup long-grain white rice
  • 3 tablespoons tomato paste

Instructions
 

  • Slice sausage into rounds and dice onion and bell pepper.
  • Mix paprika, oregano, garlic powder, salt, and pepper in a small bowl.
  • Brown sausage in olive oil, then add onions and cook until softened.
  • Add broth, rice, tomato paste, bell pepper, and seasonings; bring to a boil.
  • Cover and simmer for 20 minutes until rice is tender.
  • Garnish with parsley or green onions before serving.

Notes

For extra flavor, use smoked paprika and garnish with fresh herbs.
