Instructions
Preheat the oven to 375°F (190°C). Roll out the pie crust and place it in a pie dish.
In a large bowl, mix together the sliced peaches, sugar, lemon juice, and tapioca. Let it sit for about 15 minutes.
Pour the peach mixture into the pie crust. Spread evenly.
In a separate bowl, mix together the flour, brown sugar, nutmeg, and vanilla extract. Add the cold butter and mix until crumbly.
Spread the crumble mixture evenly over the peach filling. Sprinkle with salt.
Bake for 40-45 minutes, or until the crust is golden and the filling is bubbly.
Notes
Let the pie cool for at least 30 minutes before serving. Enjoy with vanilla ice cream or whipped cream!
