Instructions
Preheat oven to 375°F (190°C).
Mix chopped peaches with sugar and cinnamon in a bowl.
Roll out puff pastry on a floured surface to about 1/8 inch thick.
Cut pastry into 4-inch squares.
Place peach filling in the center of each square, fold corners, and seal.
Brush with egg wash and bake for 20-25 minutes until golden brown.
Notes
For best results, use fresh, ripe peaches and serve warm.
