Instructions
Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
In a bowl, combine diced peaches with sugar and cinnamon. Set aside.
Roll out puff pastry sheets on a lightly floured surface to about 1/4 inch thick.
Cut the pastry into squares large enough to fit into muffin cups. Add a spoonful of peach filling in the center and fold over the edges.
Bake for 20-25 minutes until golden brown and puffed.
Allow to cool slightly before serving, dusting with powdered sugar if desired.
Notes
For an extra touch, dust with powdered sugar before serving. Store leftovers in an airtight container at room temperature for up to 2 days.
