Roasted Asparagus and Carrots

Ingredients
  

  • 1 lb Fresh Asparagus fresh
  • 2 medium Carrots sliced thin
  • 2 tbsp Olive Oil
  • to taste Salt & Pepper
  • 1 tbsp Fresh Lemon Zest optional
  • ¼ cup Goat Cheese crumbled
  • chopped optional Fresh herbs like parsley or thyme for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • Trim the tough ends of the asparagus. Slice the carrots into thin pieces to ensure they cook evenly with the asparagus.
  • Toss the asparagus and carrots with olive oil, salt, pepper, and garlic powder (if using). Spread the vegetables evenly on the prepared baking sheet in a single layer.
  • Roast in the preheated oven for about 20-25 minutes, or until the asparagus is tender and slightly browned, and the carrots are golden and cooked through.
  • Garnish with lemon zest and fresh parsley if desired. Serve warm with crumbled goat cheese on top.

Notes

For an extra burst of flavor, drizzle with a bit of lemon juice before serving. Adjust cooking time based on the thickness of your asparagus spears.
