Instructions
Mix crushed Samoa cookies with melted butter and press into a springform pan to form the crust.
Beat cream cheese, sugar, eggs, and vanilla until smooth; fold in crushed cookies and shredded coconut.
Pour filling over crust, sprinkle with extra coconut and crushed cookies, then bake at 325°F (160°C) for 60 minutes.
Cool completely, then drizzle with caramel sauce and top with chocolate ganache and Samoa cookies.
Notes
Chill the cheesecake for at least 4 hours before serving for best results.
