Ingredients
  

Peaches

  • 1 cup peaches peeled/diced
  • 0.5 cup vegetable oil
  • 0.5 cup sugar
  • 2 eggs
  • 0.5 cup sour cream
  • 1 tsp vanilla extract
  • 1.5 cups flour
  • 1 tsp baking soda
  • 0.5 tsp salt

Instructions
 

  • Preheat oven to 350 degrees and spray 3 mini loaf pans or 1 large loaf pan.
  • In a medium bowl, combine the peaches, oil, sugar, eggs, sour cream, and vanilla extract.
  • Stir in the flour, baking soda, and salt until just combined.
  • Pour batter evenly into prepared pans.
  • Bake for 25-30 minutes for mini loaves or 50-55 minutes for a large loaf.
  • Remove from oven and allow to cool slightly before slicing and enjoying!

Notes

For the best flavor, use fresh, ripe peaches. Allow the bread to cool completely before storing.
