Ingredients
  

  • 6 mini cucumbers (sliced)
  • 0.5 tsp salt
  • 2 garlic cloves (minced)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp chili oil (or chili crunch)
  • 0.5 tsp sugar
  • 0.5 tsp toasted sesame seeds
  • 0.25 tsp Korean chili flakes or red pepper flakes

Instructions
 

  • Add cucumbers and salt to a bowl and let them sit for 10 minutes; drain any liquid.
  • Add the remaining ingredients to the cucumbers and stir to combine. Enjoy immediately, or refrigerate for up to 4 days.

Notes

Adjust the level of spiciness to your liking by using more or less chili oil. For extra crunch, garnish with additional toasted sesame seeds before serving.
