Ingredients
  

  • 1 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon espresso powder optional, omit if you don't like coffee
  • 0.75 cup unsalted butter
  • 2 tablespoons oil canola, vegetable, or coconut
  • 1.333 cups granulated sugar divided
  • 2 large eggs
  • 1 large egg yolk
  • 2 teaspoons vanilla extract optional, but recommended
  • 0.75 cup chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9x9-inch pan with parchment paper and lightly spray with non-stick spray.
  • Sift together flour, baking powder, salt, cocoa powder, and espresso powder in a large bowl. Set aside.
  • Melt butter, oil, and 1/3 cup sugar in a saucepan over medium heat, stirring frequently. Remove from heat.
  • Whisk eggs, egg yolk, vanilla (if using), and remaining sugar in a mixing bowl for about 30 seconds.
  • Gradually pour the warm butter mixture into the egg mixture, whisking constantly until combined.
  • Stir in dry ingredients and chocolate chips until just combined. Pour batter into the prepared pan and smooth top.
  • Bake for 28-30 minutes or until edges are firm and top is shiny. Cool completely before slicing.

Notes

For fudgier brownies, bake for 28 minutes. For firmer texture, bake up to 30 minutes.
