Instructions
Preheat oven to 350°F (175°C). Line a 9x9-inch pan with parchment paper and lightly spray with non-stick spray.
Sift together flour, baking powder, salt, cocoa powder, and espresso powder in a large bowl. Set aside.
Melt butter, oil, and 1/3 cup sugar in a saucepan over medium heat, stirring frequently. Remove from heat.
Whisk eggs, egg yolk, vanilla (if using), and remaining sugar in a mixing bowl for about 30 seconds.
Gradually pour the warm butter mixture into the egg mixture, whisking constantly until combined.
Stir in dry ingredients and chocolate chips until just combined. Pour batter into the prepared pan and smooth top.
Bake for 28-30 minutes or until edges are firm and top is shiny. Cool completely before slicing.
Notes
For fudgier brownies, bake for 28 minutes. For firmer texture, bake up to 30 minutes.
