  • 6 to 8 ripe peaches peaches peeled and sliced
  • 1 cup granulated sugar divided
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • ¼ teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • cup unsalted butter melted
  • 1 tablespoon sugar
  • 1 teaspoon ground cinnamon

  • Preheat oven to 375°F (190°C). Peel and slice peaches, mixing with 3/4 cup sugar, vanilla, lemon juice, and cinnamon.
  • Mix flour, remaining sugar, baking powder, and salt. Add milk and melted butter, stirring until just combined.
  • Pour peach mixture into a baking dish. Drop spoonfuls of batter evenly over peaches.
  • Bake for 40-45 minutes, or until crust is golden and filling is bubbly.
  • Let cool slightly before serving. Enjoy warm with vanilla ice cream or whipped cream.

Notes

For the best flavor, use ripe, fresh peaches. If using frozen, thaw and pat dry before using.
